- 1 (420 g) can kidney beans, rinsed and drained
- 2 medium tomatoes, chopped fine
- 1⁄2 yellow capsicum, chopped fine
- 1⁄2 red capsicum, chopped fine
- 1 avocado, chopped into chunks
- 1 tablespoon finely chopped fresh cilantro leaves
- 2 tablespoons lime juice
directions
- Combine all ingredients together and serve with either warm flour tortillas or corn chips.

Although I don't much care for avocado, I did include it here, though diced into kidney-bean-size pieces! After preparing this salsa, I did let it chill in the refrigerator for several hours & will admit that I very much enjoyed it served with large corn scoops!
