Korean Ginger Tea

"From koreanrecipes.org.If spicy is not your thing,don't boil it for that long.Just a little simmer to get it just the way you like it.Koreans eat very spicy food so I'm not surprised by boiling it for 25-30 minutes.Even though I love hot food,for me even the 15 minutes was too much.I suggest to taste it and turn off the heat when is suites your taste."

  • Clean the ginger well
  • Rinse the cinnamon in cold water.
  • Thin slice the ginger.
  • Put the ginger, cinnamon, and water into a pot.
  • Boil it on medium (or low) heat for about 25-30 minutes.
  • Sieve the ginger and cinnamon. (Use a white straining cloth if you can, to catch the small dirt from the cinnamon).
  • Serve it in a tea cup. (You can also add some pine nuts and honey).

  1. This was a really great recipe, though I thought the ginger was a little too strong. I added the honey, but a little more than what was called for.
     
  2. Turned out well with changes to time and proportions. I did this by guessing at proportions for my taste and simmering for way less time. I also used more organic unpasteurized (not the same as raw sadly it still is heated to filter I understand) honey but that is a preference of honey love anyway! Made for Veggie Swap 30 ~ January 2011.
     
  3. I quartered the recipe and thought the amount of ginger was okay, but next time wouldn't cook it so long. I enjoyed the tea with a little more honey and really enjoyed the pine nuts! And I added a little more water at the end. Thanks for a yummy tea! Made for Australian Recipe Swap-Feb. 2010.
     
  4. Can we double check the proportions? This packs a wallop. I used my kitchen scale and made a half recipe using what I thought was 40 grams of ginger. Youngest Son and I finished ours, but I added water. Youngest Daughter couldn't touch it; and Mr. JB, who usually likes food with Authority, found it too powerful for him.

I come from the land of Dracula and I have two little daughters; they're three years apart.I travelled a lot and I lived in Hungary,Croatia,Canada,Thailand,Japan and Iran(DH is from here). I've seen a lot of wonderful places, the travel bug is still in me but waiting for DDs to grow a little so we can go together. Lots of wonderful memories and hoping to add some more,but my travelling style has to be adjusted now.No more backpacking! I feel old,suddenly. My girls are everything for me and I'm lucky that I'm able to be at home with them.My life really changed since having them. I like eating healthy,DH works out a lot and taught me about the right foods.Right now I'm trying to lose a few kg,but I'm happy if I lose one kg/month. Never needed a drastic diet,I drink a lot of water and luckylly there's no McDonalds here(yet) to eat junk food. I prefer homemade cooking to restaurants, these days we can make a better tasting meal at home. I like knowing what goes in my food and what hands are cooking it. I always look at a chef's hands and believe me I've seen dirty fingers too! I came to the Zaar to look for a pancake recipe and now my refrigerator is full with jars of homemade stuff. I made a lot of friends and I enjoy playing in the tag games since receiving a premium membership gift from Sydney Mike. Thank you, Syd. I want to thank everyone who makes my recipes and takes the time to take photos. Sometimes I loose track and I can't get back to thank each person making a recipe. I don't mind if someone doesn't stick to the recipe,everyone's taste and needs are different,sometimes ingredients are hard to find and I know this better than most.
