Lace Cookies

"I work at a retirement community and during the holiday season, the hallways smell delicious; especially outside Mrs. B's apartment. This is an old family recipe and she does not share it with a lot of people. I am really flattered that she shared it with me. This a really easy lace cookie recipe. Beware! this is a fragile cookie."

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl mix dry ingredients together.
  • Pour melted butter over dry ingredients.
  • Add egg and vanilla extract.
  • Drop by 1/2 teaspoons onto cookie sheets lined with aluminum foil, shiny side up.
  • Bake for 12 minutes.
  • Cool on foil then peel foil from cookies.

  1. I have been making these cookies for several years and found a couple of hints that make these a lot easier to estimate the cooking time and to remove from the foil. I spray the foil very lightly with a spritz of Pam. I use insulated baking sheets and only put nine cookies to a regular size baking sheet so that the center row bakes evenly with the outside rows. I found that they are usually perfect in eight to nine minutes (I use an electric oven). I remove the full sheet of foil with the cookies on it from the baking sheet and slide it on to cooling racks to fully cool before peeling the cookies off with a thin spatula. These are also great crumbled over a bowl of vanilla ice cream.

Like the others said, they do spread a lot during baking and you have to keep an eye on them to make sure they do not burn - lots of sugar so it can happen quickly - but otherwise these are an amazing cookie. Bake them until a nice caramel brown for the best flavor. They are super fragile so make sure you transport them accordingly. It also makes a LOT of cookies, probably more than 42.
     
  3. Great! And easy, but i didn't have any real quick oats, so I substituted 3 packs of quick serve maple and brown sugar oatmeal and it worked great!
     
  4. Baked these in two batches. First batch was in for 11 minutes and was completely burned when it came out. Second batch was in for six minutes, which apparently long enough -- cookies were chewy instead of crunchy -- but which still caused some burning around the edges. The difficulty finding the right cooking time may be due to the fact that I bake in a gas oven. Also, you apparently have to put the cookies FAR APART on the cookie sheets. I put them with about an inch and a half of space separating them, and they all merged together into a sheet of cookie, so I don't know exactly how far apart will work. It appears to me that this recipe seems easy but is in fact difficult to get exactly right.
     
  5. These cookies turned out very good. But they seem to burn quickly so keep an eye on them.
