Leftover Mashed Potato Cakes

"I searched the internet for a recipe to use up some left over mashed potatoes. This is what I found and made. It's simple, easy, and a great way to use up left over mashed potatoes. This is one recipe that I always come to when I have leftover mashed potatoes. I once made these and I wasn't serving them right away, so I let them cool down then I froze them. A few weeks later I removed them from the freezer let them defrost and they were just as good. I have even added leftover chicken pieces and leftover meatloaf to this and it was yummy."

  • Beat the egg.
  • Mix the beaten egg with the mashed potatoes.
  • Stir in the dry ingredients.
  • Add the milk and mix well.
  • The batter should be very thick.
  • Melt the shortening or heat the oil in a skillet.
  • Spoon batter into the skillet to form 3" to 3-1/2" inch wide pancakes, about 1/2" thick.
  • Brown on one side, over medium heat. Turn and brown on the other side.
  • Serve with ketchup.
  • These are great cold and served the next day.

  1. My mother made these often when I was growing up. One of my favorite things to eat. The only thing she did differently was to add a piece of raw bacon in the middle of the patty. The bacon cooked adding an amazing flavor throughout. Thanks for submitting this recipe. It brought back warm memories.

  1. Someone else had commented that the recipe called for "way too much" flour. It will vary depending on the consistency of the leftover mashed potatoes that you're using. Very good recipe!
     
  2. Great recipe! I overestimated the amount of potatoes to make yesterday and had enough to make four batches! Whole family loved them, after the first batch I added some garlic and bacon to the recipe and everyone is still raving! Definitely keeping and sharing this one.

This might help, I don't use peppers, but I do use breadcrumb to make it hold together and instead of frying I bake in the oven at 350 , I spray the bottom of pan ,I but a small bit of butter ,I use can't believe it not butter on top. Bake for about 4 -5 until brown on bottom and flip on other side until brown . its a recipe that's been handed down
     
  4. So glad to finally figure out what I was doing wrong! Made these with chopped onion (no green onion) and they turned out great! Hubby was very happy as he hadn't had "the" potato cakes like his grandma made for many years. He said these were perfect!!! :)
     
  5. I have been making potato cakes for 54 years, and did pretty good, if I must say so.. but these are the best! Thanks for posting this recipe.. its going in my special file for use many many times..
