  1. Rinse and pat scallops dry with paper towels. Season with salt & pepper. Add canola oil to a large skillet over medium high heat and warm until almost smoking.
  2. Place scallps in skillet and cook until browned on first side, 2-4 minutes. Flip and cook until second side is brown, about 2 minutes. Transfer to serving dish.
  3. Melt butter in skillet. Add garlic and cook just until fragrant, about 30 seconds. Whisk in lemon juice and parsley. Pour sauce over scallops and serve immediately.
