  • Lemon Cake
  • 1 12 cups butter, room temperature
  • 3 cups granulated sugar
  • 5 large eggs, room temperature
  • 3 cups all-purpose flour
  • 34 cup carbonated lemon-lime beverage
  • 2 tablespoons lemon extract
  • Lemon Icing
  • 3 cups icing sugar, sifted
  • 4 tablespoons butter, room temperature
  • 1 teaspoon lemon extract


  1. Cake:
  2. Preheat oven to 350°F Grease & flour a bundt pan.
  3. Cream the butter and sugar using a mixer on medium speed until light and fluffy.
  4. With the mixer on low, add the eggs, one at a time until mixed.
  5. Add the soda & lemon extract to the mixture, then slowly add the flour and mix just until fully incorporated.
  6. Bake for 75 minutes, or until a cake tester is removed with just a few crumbs.
  7. Let cool for 10 minutes, then remove from the pan. Let the cake cool completely before drizzling with the icing. Or if preferred, just dust with icing sugar.
  8. Lemon Icing:
  9. Beat the butter until light then add the icing sugar and extract. If the icing is too thin, add a bit of milk. If too thin, add a bit more icing sugar.
