  • Pre-heat the oven to 375°F.
  • Wash and cut the potatoes into quarters lengthwise
  • Place into a large, deep ovenproof baking dish
  • Drizzle with olive oil.
  • Squeeze the lemons and remove the zest from 1 or 2, crush the garlic and chop the oregano.
  • Season the potatoes well and scatter with the oregano and lemon zest
  • Bake uncovered for about 30-40 minutes or until tender.
  • Can also be placed under a very hot broiler for a few minutes to brown.
  • Serve with a squeeze of lemon juice.

  2. A nice wedge fry that was quick and easy. The recipe cut down to serve two very nicely. Used small russet and baked the full 40 minutes and they were just right. Thanks for the post.
     
  3. I really loved the flavor outcome. I used russets and found that they were getting to dark while while still quite hard. I covered the dish with foil, lowered the oven temp to 350 and gave them 30 mins like that (they had already been for about 15). I used very thin slices of the whole lemon in place of the zest and they were yummy.
     
  4. These were super easy and quite tasty! I halved the recipe, using 6 medium California white potatoes, 2 lemons and 2 cloves of garlic (chopped with some fresh oregano). The taste was subtle yet quite flavorful! I roasted the potatoes for almost 40 minutes, then ran them under the broiler for some extra color. These potatoes made a wonderful accompaniment to Recipe #423812. Thanks for sharing this. Made by a RedHot Renegade for ZWT6.

I am also&nbsp;married to my best friend, Jeff and have been since April 2005.&nbsp; I love cooking, hate cleaning and will do whatever I can to get out of it!&nbsp;&nbsp;I&nbsp;love grilling and baking.&nbsp;&nbsp;I do most of the grilling at my house, and bake for almost a week straight at Christmas time!&nbsp; I can make or will attempt just about anything,&nbsp;though I rarely make&nbsp;brownies, my husband's are the best!&nbsp; Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p> <p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites.&nbsp; I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day!&nbsp; Over the past couple years with zaar, I have found tons of new recipes&nbsp;my family&nbsp;normally wouldn&rsquo;t eat&nbsp;but have been happily surprised with new favorites.</strong></span></p> <p><span><strong>I&nbsp;love to join in&nbsp;all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p> <p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes.&nbsp; Most of all though&nbsp;are my kids; being home all day with them is fun and challenging, but I wouldn&rsquo;t trade it for any salary!!</strong></span></p>
