Lemon Roast Potatoes (Patates Psites)

- 10 -12 medium potatoes
- 3 -4 lemons
- 1 -2 garlic clove
- olive oil
- oregano
- salt & pepper, to taste
directions
- Pre-heat the oven to 375°F.
- Wash and cut the potatoes into quarters lengthwise
- Place into a large, deep ovenproof baking dish
- Drizzle with olive oil.
- Squeeze the lemons and remove the zest from 1 or 2, crush the garlic and chop the oregano.
- Season the potatoes well and scatter with the oregano and lemon zest
- Bake uncovered for about 30-40 minutes or until tender.
- Can also be placed under a very hot broiler for a few minutes to brown.
- Serve with a squeeze of lemon juice.

I really loved the flavor outcome. I used russets and found that they were getting to dark while while still quite hard. I covered the dish with foil, lowered the oven temp to 350 and gave them 30 mins like that (they had already been for about 15). I used very thin slices of the whole lemon in place of the zest and they were yummy.

These were super easy and quite tasty! I halved the recipe, using 6 medium California white potatoes, 2 lemons and 2 cloves of garlic (chopped with some fresh oregano). The taste was subtle yet quite flavorful! I roasted the potatoes for almost 40 minutes, then ran them under the broiler for some extra color. <p><span><strong>I am a stay at home mom to two wonderful boys; Joshua (8years), Kaiden (5 years), and baby GIRL, Madalynn (19 months)! I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day! Over the past couple years with zaar, I have found tons of new recipes my family normally wouldn’t eat but have been happily surprised with new favorites.</strong></span></p>
<p><span><strong>I love to join in all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p>
<p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes. Most of all though are my kids; being home all day with them is fun and challenging, but I wouldn’t trade it for any salary!!</strong></span></p>
