Lennie's Cranberry Mandarin Mini Loaves

- 2 cups all-purpose flour
- 1 cup white sugar
- 3 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 1⁄2 cups fresh cranberries (if using frozen, no need to thaw)
- 2 eggs
- 3⁄4 cup 1% low-fat milk
- 3 tablespoons canola oil
- 1⁄4 teaspoon orange extract
- 1 tablespoon freshly grated orange zest
- 1 (10 ounce) can mandarin oranges in juice, 1/4 cup juice reserved
directions
- Preheat oven to 350F; spray 4 mini loaf pans with Pam and set aside (you could also do this in two 8x4 loaf pans, if you can't find the smaller pans, but the baking time will likely be longer).
- In a large bowl, combine dry ingredients (flour, sugar, baking powder and salt); add cranberries to flour mixture and stir so berries are somewhat coated in flour-- this helps prevent the cranberries from sinking to the bottom of the loaves when baking.
- Set aside.
- In a separate bowl, beat eggs and milk (I used lowfat milk) with a mixer on low, then beat in 1/4 cup juice reserved from tinned oranges, the oil, the extract and the orange zest.
- Stir wet mixture into dry mixture, stirring just until dry ingredients are moistened; do not overmix.
- Make sure tinned oranges are well drained, then stir into batter.
- Divide batter between 4 mini loaf pans (you'll find they'll be about 3/4 full).
- Bake in preheated oven for 35 to 40 minutes; a tester will come out clean.
- Cool on rack in tins for about 15 minutes, then remove from tins and let sit on rack until completely cool.

This recipe is really good. I read the last review about tartness before I baked this bread so I added an extra 1/2 cup of sugar. Also, after the loaf (I made one large loaf instead of small loaves) had cooled I covered the entire top in an orange glaze. I think it made all the difference - helped to offset the tartness a bit. The glaze was a small mix of powdered sugar, orange juice (tiny amount), and a drop of orange extract. It dries beautifully as well. THANKS.

I made 6 batches of this yesterday, and I added about 1/4 cup pecans per batch because I had them in the freezer. The bread is very good, but it is a very tart bread, just as cranberries are very tart. Honestly, I still was surprised at how tart it was. I think if one were to cut the cranberries and mix them with the sugar, and them add them to the flour mixture, it would be slightly sweeter. My mandarins didnt get torn up, I just made sure to fold them into the mixture gently.

I was looking for a recipe to use up the leftover cranberries I had in the freezer and lo and behold! Right there on the homepage was a photo of this recipe and I thought it looked great. Boy was I right! I was out of milk so I just subbed it with nonfat yogurt and used 1 tablespoon of triple sec since I was out of orange extract. Turned out wonderfully! I'm so glad this recipe and I ran into each other, thanks Lennie!

I didn't know how these have gone 2 1/2 years without anyone trying them!! They are delicious!! I made then into 4 mini loaves and baked for 35 minutes. I used skim milk as that's what we drink. I found the batter only filled each pan about 1/2 full. I used frozen cranberries. I'm so glad I checked your un reviewed recipes or I wouldn't have found this gem, thanks for posting the recipe Lennie.
