- 1 cauliflower, cooked and drained
- 1⁄4 cup low-fat mayonnaise
- 1⁄4 cup low-fat sour cream
- 1 tablespoon Dijon mustard
- 2 tablespoons grated parmesan cheese
- 2 tablespoons toasted pine nuts
directions
- Heat cauliflower in microwave for 5 minutes.
- Set aside.
- In a microwave safe container combine mayonnaise, sour cream, Dijon and parmesan cheese; heat in microwave for 1 1/2 minutes.
- Spoon over cauliflower.
- Sprinkle with toasted pine nuts.
- Serve.
- Tip: Toasted almonds are also very good.

I had a normal sized organic head of cauliflower; I made the sauce as directed and it was very easy to put together, although I felt that it made way too much and I didn't know what else I could use it for, so ended up wasting about a 1/3 of it. I enjoy the taste of dijon, but found it to be overwhelming. DH also didn't care for the mustard taste and DS was also not a fan either. I don't think I'd do this one again, sorry. Made for ZWT4.

I agree, this is a nice change from the usual cheddary-cheesy sauces for cauliflower. The Dijon adds great flavor and the nuts are a nice bonus (I used almonds in place of pine nuts). I sprinkled some paprika on top for a pretty look. Another great thing is that this can be made in well under 10 minutes. Thanx for posting!
