Lime, Orange or Lemon Curd

"Easy to make and so many uses, I like to mix a few tablespoons with some rum and drizzle that over coconut ice cream. Not to forget it is a nice gift."

  • Soften the limes by rolling them back and forth with your hands on the kitchen counter; you will get more juice out of them if you do this.
  • Grate the zest very finely, take care that you don’t grate the white pith.
  • Squeeze the juice out of the fruit; you will need 150mL.
  • Put the rind (zest), butter, sugar and juice in a heatproof basin.
  • Stand this over a pan of boiling water and heat until the sugar and butter have melted.
  • Lower the heat, you don’t want the water to boil now.
  • Whisk in the eggs, when incorporated use a wooden spoon and stir until the curd has thickened and coats the back of the spoon, 20 to 25 minutes.
  • Pour into hot jars, when cool label them.
  • Use this recipe also to make orange or lemon curd, just make sure you have 150mL juice Keep in the fridge.

  1. I made the lemon curd variety. It has the 'right' amount of sweet and the 'right' amount of tart for me. I did find it didnt thicken up as much as other lemon curd recipes Ive tried, but still an easy tasty recipe. Thanks for posting.
     
  2. Excellent curd! I used 4 small limes and one medium sized lemon. Be careful to measure out the juice to just 150 ml as I had extra juice leftover. I cooked mine the full 25 minutes and found it set up just fine. It has a lovely color and the bits of zest floating in the curd make it glisten. It is really quite attractive and tastes as good as it looks.
     
  3. Awesome recipe! Super easy and tastes great. This is my "friends and neighbors" christmas present this year. Plan to make several batches this week. I'm planning to try the orange, so will edit with quantities, since no one else seems to have tried it yet. ETA: Zest from three oranges and juice from about two and a half seem to do the trick! I tried decreasing the sugar on the orange curd, but it's not a good idea-- didn't set up correctly. Lime tastes awesome, too!!
     
  4. I made lemon curd for Recipe #214277, and it was really good! I didn't use a double boiler (because I missed that until it was too late) and it was still smooth.
     
  5. Quick and easy, I added a drop more sugar. While it was cooling this morning I turned on the TV only to see Ina Garden making a "Lime curd tart", now I know what to do with my "extras".

  1. I made the lime curd, I used it as the filling instead of lemon curd for a meringue roulade with cream, it goes well with the sweetness of meringue.

They don’t have any human children and “created” their own family, which means I have to share them with Hannah, she is a 6 years old tortie cat, Abby the dog, she is a 9 year old Beagle, and a one year old black Miniature Pincher named Poppy, I refuse to tell you my age but I am a georgious lilac British Shorthair cat!! It is obvious she adores pets just by looking at her name she uses on Zaar (many on Zaar call her Pets or Petsie Poo), her name in real life is Annelies and that is a common Dutch name. My mom always liked to cook, but since she joined Zaar it got out of control, and it doesn’t help that she is disorganized. Printed recipes everywhere in the house, the recipe binders have got bigger and just between you and me, her hips too!!! I have lived in Holland all of my life until now, but they lived in several different countries/places:- desert and coastal Oman, up North and West in Holland, Vancouver-Canada, Aberdeen- Scotland and in Norway they lived in Bergen and Oslo. We have all moved together to England, as you can see I’ve already learnt the language! I heard her say to Dad that this is the last time she moved to another country...she's had it with moving from one place to another! ( its her age...she's getting grumpy) Mom is 55 years old but I always hear her say that the date of her birthday does not mean that much to her, the date of her cancer anniversary is more important, because so far she is a survivor. Besides cooking she has other interests too, crafts, gardening and soap making. She likes Zaar and is one of the hosts on the German-Benelux Forum here on RecipeZaar.
