Linguini with Scampi

  • Preheat oven to 400 degrees.
  • Bring a large pot of lightly salted water to a boil.
  • Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • While water is boiling, put butter or margarine in 13x9x2 inch glass baking dish and place in oven until butter melts.
  • Add shrimp, garlic, and lemon juice to melted butter; stir to blend.
  • Return dish to oven and bake shrimp 3 minutes.
  • Mix in parsley, and continue baking until shrimp are just cooked through, about 2 minutes longer.
  • Season with salt and pepper.
  • Drain pasta, and transfer to a large bowl.
  • Spoon shrimp mixture over, and toss to combine.
  • Serve immediately.

  2. This was such an easy way to fix shrimp! I thought the taste was great, even though I didn't have any lemon juice to put in it. Instead of parsley, I just added Italian seasoning. Thanks so much for posting the recipe! :)
     
  3. I have made this several times and each time have received great comments. I have found that even using a 1 pound package of linguine, the taste is retained and it adds another serving.
     
  4. This was the feature for our Valentine Dinner for DH, DS and myself, along with some steamed asparagus and french bread. It perfectly fit the bill for a meal that said "Wow" with minimal effort.
     
  5. Although I loved preparing this (it was SO easy), I feel like it was missing something. It was good, but could have used a little crushed red pepper flake or something to spice it up. But it was very good and I will make it again.
