  • Soak beans 8 hours.
  • Drain. Place in a pot. Cover with water. Bring to a boil. Reduce. Cover. Simmer 1 hour. Drain.
  • In a skillet heat oil.
  • Add the garlic, shallots, thyme and anchovies. Saute 3 minutes.
  • Add broth and beans. Saute 3 more minutes.
  • Puree. Place in a saucepan.
  • Clean out skillet.
  • Dredge fish in flour to coat.
  • Heat oil in skillet.
  • Add fish. Saute until golden on both sides (sbout 3 minutes each).
  • Re-heat puree. Place on plates. Top with fish. Garnish with onions and thyme.
  • YUM!
