Low Cal Shrimp Pasta

"This may be low in calories, but it is definately high in taste. The combination of Ranch and Italian dressings sounds odd, but is VERY good! My son is a chef at a restaurant in town and the head chef told me about it when I commented on their wonderful pasta!"

ingredients

  • 6 cups pasta, boiled, rinsed in cold water (I use fusilli)
  • 1 cup shrimp, cooked, thawed
  • 12 cup ranch salad dressing
  • 14 cup Italian dressing
  • 12 cup sweet green pepper, raw, chopped
  • 14 cup white onion, raw, chopped
  • 1 cup tomatoes, raw, diced
  • 1 cup cucumber, raw, diced
  • 14 cup parmesan cheese, fresh shredded
  • 1 cup dill pickle, chopped

directions

  • Mix all ingredients except tomatoes and dressings in a large bowl.
  • Next add Ranch dressing and stir well, salad should look sort of dry.
  • Now add Italian dressing till moistened.
  • Finally, add tomatos and lightly toss.
  • I forgot to add earlier, serve chilled!
  • Makes approx 11 one cup servings.

  1. Disappointing after the phenomenal write up - recipe is also a bit ambiguous as I did not know if was to be served warm or chilled.
     
  2. This is maybe the best pasta salad I've ever had. I was a little scared to make it, but I love all of the ingredients separately, so I figured I would like them all mixed together. I wasn't sure about the pickles, but their taste blends perfectly with everything else. Also, I used low fat dressings, and you can't even tell! This has so much flavor, and it's not dripping with dressing like other pasta salads I've had. I love it, thanks for posting the recipe!

Homeschooling mother of 7. Married 24 years this September. Our oldest boy was sous chef at a local restaurant, hence the name I picked for myself. He graduated from Culinary college last Spring and now he works as Sushi chef at the hottest sushi joint in town. It's not as challenging culinary-wise and he misses that, but sushi eaters are BIG tippers and he is saving up to go overseas for mission work. Two years ago I decided to take control of my health and life. And that included quitting a 30 year smoking habit on Feb. 12, 2006 and losing 30 lbs. I have succeeded in doing both! I feel great and I am getting very adventuresome in my life. I now walk all over town, ride my bike, have been known to skateboard :-) and on my 45th birthday I went and jumped off a BIG rope swing into a (COLD!) lake. YIKES! I have also been getting adventuresome in my cooking and eating. I love eating more than I love cooking, but mostly because 90% of the kids AND my husband likes junk food and I don't! I joined zaar's to start making yummy healthy foods for myself, and hopefully in the process, convince the rest of the family that good food is Good Food! My whole lifestyle and way of eating/cooking has so totally changed that I really need help figuring out how to cook so my family is satisfied, and yet healthy. <img src="http://i80.photobucket.com/albums/j166/ZaarNicksMom/PACsticker-Adopted.jpg">
