Low-Cal Strawberry Banana Salad

"This is a low calorie, diabetic friendly, chilled fruit dessert salad. I found this recipe in an old Rockingham County Extension Homemakers Cookbook. I needed some low fat, low cal, desserts I can have with having Diabetes. I didn't want to give up my desserts, so trying to find recipes that work or adapt them to work for me is a challenge, but this one is great! I made it this afternoon and we had it tonight and it is now my new favorite dessert! Prep time does not include the final hours of chilling."

  • Put pineapple, juice and all, into a small saucepan.
  • Bring to a boil over medium heat.
  • Take off stove and stir in the dry gelatin mix.
  • Put this mixture into a larger bowl and when cooled somewhat, place into.
  • the fridge for 40 minutes or longer. Do not allow it to jell completely.
  • Drain the bananas and fold into the gelatin.
  • Then add the nuts (if desired), cottage cheese, and the whip topping. Fold.
  • all these ingredients together until throughly mixed.
  • Cover, and return to the fridge for several hours.

I'm a stay at home wife, mother of 2, and Granny to 6. I love cooking, especially if it is easy and quick and doesn't have ingredients that can't be picked up at the local market. In other words, no exotic or unheard of spices or foods. I like down to earth food with lots of fresh meats and veggies and wonderful seasonal fruits. My husband and I both have diabetes but we are not on any medication as yet. We control it with diet and exercise. So lots of recipes that use butter and rich cream and such, I have to adapt to suit our diabetes. So some of the recipes I like, have to be adjusted accordingly, and so I have some that I have adapted and they taste great. I'm looking forward to sharing some with you and using some I find on this site.
