Low Fat (But You Wouldn't Know It) Banana Bread

"I omitted the oil from my banana bread recipe and replaced it with the same amount of unsweetened applesauce and reduced the amount of sugar added. I also replaced half of the white flour with whole wheat flour. The banana bread tastes exactly the same as it did with the oil but now with much less fat. you can also add nuts, chocolate chips or gum drops to the batter once all the ingredients are mixed!"

  • Beat the sugar and applesauce together.
  • Add eggs and mashed banana and beat well.
  • In another bowl combine both flours, baking soda, baking powder and salt. Add this to the banana mixture and mix well.
  • Pour the batter into a greased and floured 9x5x21/2" loaf pan.
  • Bake at 350oF for about 1 hour. If a wooden tester inserted into the center of the bread comes out clean the bread is done. Turn the bread out of the loaf pan and allow cake to cool on a wire rack. Wrap the bread in tin foil and store overnight berfore slicing.

  1. I follwed recipe to a T. It was ho hum okay. I do admit I did not have all purpose flour, so used bread flour. They turned out nice and fluffy and smelled yummy. The dissapointment was in the taste a bit bland. Maybe needs a bit more sugar? I used Splenda which generally works the same as sugar.
     
  2. This is one tasty banana bread, made it last weekend and it didn't last long!
