Low Sodium Meatloaf

"My mom was recently diagnosed with congestive heart failure, so I have been trying to come up with recipes that she can have (she is on a restricted sodium diet) that are still flavorful."

  • Saute onion, celery and carrot in olive oil until tender; cool slightly.
  • In large bowl mix all meatloaf ingredients together with hands. Shape into loaf and place in baking pan.
  • Combine sauce ingredients in small bowl; spread over meatloaf.
  • Bake in preheated 350° oven for 1 hour.

  1. I made this for dinner and I told my husband and teenage son, to season with a bit of salt if they desired after because this recipe was mostly for me. They didn't even do it! I was recently diagnosed with congestive heart failure and was told to follow a low sodium/heart healthy diet. Meatloaf is a huge favorite in our household and this one was right on the spot! The flavors and seasonings were perfect, we didn't even miss the sodium. Also, the sauce really surprised us because it was made with such simple ingredients and packed a ton of flavor!! Hands down, will be making this again. It was just delicious and hit my meatloaf craving spot. Thank you so much for such a simple, easy to follow, flavorful recipe. Highly recommend you try it.
     
  2. This is delicious. I used 1lb ground beef and 1lb ground pork. I added some diced red pepper to the veggies and some thyme to the spices. Will definately make again. Didnt miss the salt at all.
     
  3. I first found this recipe in January 2014, have been making it ever since. Everyone loves it even with a few changes I’ve made. I use turkey instead of beef & almond milk in place of dairy. Great recipe!
     
  4. This was really good! Loved the sauce! I left the carrots and celery out since I was out of both of them and added some freshly chopped oregano, and cumin (as I have always done) to the meat mixture. We enjoyed it and my mom and aunt loved it two days later! It was still moist when I reheated it! Will be using this as my go-to for meatloaf for now on!
     
  5. My Mom is in last stage heart failure and is comfortable at home with care. We are preparing her sodium restrictive meals .... which is no small effort for a cardiac diet. THANK YOU so much for this recipe! My Mom loved it! Will be making it again for her!!

Tweaks

  1. I'm counting calories, so I changed it up a bit by splitting the raw meatloaf into eight portions and baking for 40 minutes in a mini loaf pan. eight individual serving mini loaves!
     
  2. I didn't have the original Mrs.Dash seasoning so I used "Tomato Basil Garlic Seasoning Blend." It gave excellent favor to the meatloaf.
     
  3. I substitute half the tomato paste with pureed summer squash.
     
  4. Left out the worcestershire sauce

I was born in Chicago, IL and have lived in the area all my life. I love to cook and plan meals and always have. As a child I would watch Julia Childs on TV every day (she came on right after Mr. Rogers) and I have been interested in cooking ever since. Now that I have a family I enjoy the quick and easy recipes just as much as the more intricate ones. I didn't mind putting in the extra time and effort when I only cooked recreationally. I still like to do that sometimes, but for the day-to-day chore of cooking (and sometimes it is a chore) I like the option of fast and simple. I enjoy trying new recipes and sharing favorites of mine. I have found that sometimes the most unlikely sounding ones turn out to be the best! I try to always review the recipes I try because I know how much I enjoy getting that feedback myself. Even when it is not necessarily positive because sometimes suggestions help me tweak things and make them better!
