- Preheat oven to 400 degrees.
- Butter skillet and heat until butter sizzles.
- Mix all ingredients.
- Pour enough mixture onto skillet to cover evenly at about 1/4" thick.
- Heat on skillet until bottom of baby is "done" -- about 2 minutes.
- Put the whole thing in the oven and bake until it puffs up -- about 10 minutes.
- Slather with butter, sugar, jelly, jam or whatever else you can think of.

My mum made this for me heaps when I was a kid, and I made it for my wife today - however, mums recipe has 3 eggs (rather than 2) and emphasizes beating the initial mixture very throughly so it is fluffy. 3 eggs makes it taste a bit more like french toast mix than pancake mix (which I like by my wife doesn't) - also the mix goes in a buttered cake tin straight in the oven at 250C for ~10 minutes. Serve with lemon & sugar. Had mine with maple syrup instead this morning which was OK. Cas & LisaÂ
