  • Preheat oven to 400 degrees.
  • Butter skillet and heat until butter sizzles.
  • Mix all ingredients.
  • Pour enough mixture onto skillet to cover evenly at about 1/4" thick.
  • Heat on skillet until bottom of baby is "done" -- about 2 minutes.
  • Put the whole thing in the oven and bake until it puffs up -- about 10 minutes.
  • Slather with butter, sugar, jelly, jam or whatever else you can think of.

  3. This recipe does not work as well as others on this site. It also stuck to the dish much more than I expected. However the taste is good.

My mum made this for me heaps when I was a kid, and I made it for my wife today - however, mums recipe has 3 eggs (rather than 2) and emphasizes beating the initial mixture very throughly so it is fluffy. 3 eggs makes it taste a bit more like french toast mix than pancake mix (which I like by my wife doesn't) - also the mix goes in a buttered cake tin straight in the oven at 250C for ~10 minutes. Serve with lemon & sugar. Had mine with maple syrup instead this morning which was OK. Cas & Lisa
