Directions

  1. Preheat oven to 375*.
  2. Butter 2 9X9 baking pans (glass works great).
  3. Break eggs into mixing bowl. Add milk, salt, pepper, and cayenne. Mix well.
  4. Layer bacon bits, ham and vegetables in order listed in baking pans.
  5. Sprinkle 1/4 Cup cheese over each.
  6. Divide egg mixture evenly between both pans.
  7. Bake at 375* 35 minutes, or until eggs are cooked.
  8. Remove from oven and top with remaining cheese.
  9. Slice each fritata into 6 pieces. Serve with green salad, fruit, and sauteed squash.
