Ingredients Nutrition

  • 4 cups lettuce, in bite size pieces (half Romaine if desired)
  • 1 (11 ounce) can mandarin oranges, well drained
  • 1 small cucumber, sliced
  • 13 cup sliced almonds or 13 cup chopped walnuts
  • 13 cup shredded coconut
  • 14 cup sweet and sour dressing or 14 cup raspberry vinaigrette dressing
  • 1 cup cheese crouton

Directions

  1. In a large salad bowl, combine lettuce, oranges and cucumber.
  2. Add nuts and coconut.
  3. Add dressing and toss.
  4. Top with croutons and toss.
