Maple Bacon Muffins

"A great grab'n'go breakfast muffin recipe born from the happy accident of getting maple syrup on your bacon after piling your brunch plate a little too full! (And yes, I'm speaking from experience!!) I often add more bacon than the recipe calls for and you can use whatever pancake syrup you like or have on hand."

  • In a large bowl, combine flour, bacon, baking powder and salt.
  • In another bowl, whisk the remaining ingredients together.
  • Stir into dry ingredients just until moistened.
  • Fill greased or paper-lined muffin cups two-thirds full. Bake at 400F for 20-25 minutes or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from pan to a wire rack.

  1. 3 stars because as is, this recipe needs more flavor and the muffins are too sweet. I added a good tsp of coarse black pepper, used buttermilk instead of regular milk for more fluffiness, then had to add 1/2 tsp baking soda and decreased baking powder to 2 1/2 tsp. I used 1/2 cup maple syrup and 1/2 tsp pure maple extract I also added 1/2 cup sharp cheddar cheese grated and a 1/2 tsp smoked paprika. They were light, fluffy and delicious. Important to use good quality bacon and cook very crisp. Did not use bacon grease for the pans. NOT a healthy option in my opinion.
     
  2. These are really good! The maple and bacon flavor are great together. I used real maple syrup and these are just yummy! They remind me of the pancake part of a McGriddle sandwich at McDonalds - only better because they are homemade. Thanks for sharing!
     
  3. So if you are greasing the muffin tin with bacon grease, i recommend decreasing cooking time by 2 minutes. I will definitely atte.pt again this morning. In pursuit of a light fluffy muffin. I have delicious albeit overbaked, maple bacon rocks.
     
  4. Enjoyed these very much. Used half real maple half the fake breakfast syrup since we ran out of maple--definitely think using a high quality maple is key for this. Appreciated the tip from the reviewer that said to use the bacon grease to grease the pan, really added that extra bacon flavor. Next time will sprinkle some brown sugar either on top of the muffins before cooking or cook the bacon in some for extra sweetness. Thanks for posting, will make these again when I remember to get more syrup!

  2. I used a combination of leftover Canadian (peameal) bacon and ham in place of the bacon and real maple syrup. So good! I wanted even more maple flavour so I adapted the maple butter from the Maple French Toast Muffins (#343112) - 1/4 cup margarine plus a tablespoon of brown sugar and a sploosh (generous tablespoon?) of maple syrup mixed together till smooth. Spread some on a warm or cool muffin - heavenly. Buttery maple taste, soft crumb texture punctuated with the chunks of slightly salty meat. Can't wait to try this recipe with regular bacon. <p>I live in beautiful western Manitoba, Canada. I'm a wife and stay-at-home mom with 2 daughters, Peanut (who turned 7 at the end of January) and Fidget (who will turn 5 in the middle of June) and a husband whom I call The Bushman, who's motto, lucky for me, is I'll try anything once! I'm a Mennonite by heritage as well as faith. I'm a born again Christian and we belong to a small Evangelical Mennonite country church where The Bushman and I are fairly involved. The church is made up largely of family groups -- most are related somehow. That's actually a Mennonite pastime, finding out how everyone's related to each other. If we're not directly related, we'll find a connection somehow -- your third cousin's wife's brother is for SURE my mother's father's sister-in-law's nephew!! See, isn't it amazing how small this world really is?! For fun, I enjoy photography -- my favourite subjects are sunsets, cloud formations, my girls, and nature close-ups -- reading, (John Grisham, Frederick Forsythe, Robert Ludlum, and Clive Cussler are my favourite authors), playing piano, and going for nice long walks, either first thing in the morning or towards sunset. I've even learned to enjoy it in the dead of winter, when I have no choice but to walk in semi-darkness. For those of you who've never experienced a Manitoba winter (lucky you!), 'the dead of winter' includes pretty much all of December, January, and February!! And up here, our shortest days of the year have only 7 hours of daylight, so if it's cloudy, well, it feels like no daylight at all! It's my favourite time to plan my day, pray, and daydream about what might happen if I'd ever actually buy a lottery ticket and win!! I love cooking -- baking not so much (mostly because it's not essential to survival and if there's baking in the house, that's all we eat!!) -- and reading recipe books is a favourite pastime of mine. I love the Company's Coming series of cookbooks, but my favourite is Taste of Home magazine. Since buying a premium membership here though, I've decided to let my subscription run out. I'll miss it, but I've decided there's really no need for it, since all the best recipes in the world eventually end up here!!</p>
