  1. I didn't let it meld as long as called for, and used 2 lbs of hot dogs instead of bacon. I ended up with some delicious beans + wieners. TFS

  2. These were delicious, but definitely better the 2nd day I served them. I replaced the back bacon with a veggie bacon to make them vegetarian and omitted the tomato paste too. I love sweet baked beans and maple syrup and when I saw this recipe, I knew I had to try it. The flavor was spot on. Usually my oven runs hot but it took almost 5 hours for them to cook (and I did soak them for 14 hrs). I may try them in the crockpot next time since it did tie up my oven longer than expected, however I wouldn't change anything else. A big hit with my 2yr old and me - we loved them. Others thought that they were "good", but I believe that to be a matter of personal taste. Served as a side to a BBQ meal. Will surely repeat this recipe - thank you Evelyn!

  3. Loved it! Real comfort food from Downeast!

  4. Darn good beans! I increased the garlic waaaay up, this bean recipe is on the sweeter side, but still very good, thanks Ev!...Kitten:)

  5. A delicious and easy baked bean recipe. I cooked these in my crockpot for about 5 hours on high and then the last hour in the oven uncovered. I did reduce the water called for due to cooking them in the crockpot instead of the oven. Something I will repeat.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
