Marinara Sauce

"Nice and simple and tasty. I use this as a basic pasta sauce and a base to many more sauces. It is a recipe I tweaked a bit from Everyday Italian cookbook."

  • In large pot, heat the oil over medium high heat. Add onions and garlic and sauté until onions are translucent, about 10 minutes. Add the celery and carrots and 1/2 tsp each salt and pepper. Sauté until vegetables are soft, about 10 minutes.
  • Add tomatoes, cheese, oregano, basil and bay leaves and simmer uncovered over low heat until sauce thickens, about 1 hour.
  • Remove and discard the bay leaves, season with more salt and pepper to taste.
