- 1⁄2 cup extra-virgin olive oil
- 2 onions, finely chopped
- 2 garlic cloves, finely chopped
- 2 celery ribs, finely chopped
- 2 carrots, peeled and finely chopped
- 1⁄2 teaspoon salt, plus more to taste
- 1⁄2 teaspoon black pepper, freshly ground plus more to taste
- 2 (32 ounce) cans crushed tomatoes
- 1 tablespoon parmesan cheese
- 2 teaspoons oregano
- 1 teaspoon basil
- 2 bay leaves, dried
directions
- In large pot, heat the oil over medium high heat. Add onions and garlic and sauté until onions are translucent, about 10 minutes. Add the celery and carrots and 1/2 tsp each salt and pepper. Sauté until vegetables are soft, about 10 minutes.
- Add tomatoes, cheese, oregano, basil and bay leaves and simmer uncovered over low heat until sauce thickens, about 1 hour.
- Remove and discard the bay leaves, season with more salt and pepper to taste.
