Marinated Tomatoes

"A zesty and flavorful sidedish to add with just about any meal.I acquired this recipe some 30 years ago from a young German exchange student and have been serving it ever since. It is best served in summer when the tomatoes from your garden are in season. Best served at room temperature."

  • Wash and slice tomatoes into wedges.
  • Slice onions thinly over wedges.
  • add vinegar& oil, salt& pepper and let marinate for approximately 1/2 to 1 hour.

  1. I make this all summer long and it is wonderful. The only difference is that I add some dried basil. Even the members of my family who dislike tomatoes love these. Plus...this is super easy, which is the way to go in the summertime :)
     
  2. I made this for dinner tonight with one of the tomatoes you gave me from your garden! YUM! I of course had to scale it down to one, since I am the only tomato fan, but this was sooo good! And soo easy! My favorite combination in a recipe! Thanks for a great salad recipe that I can make for myself without a lot of work! I am no longer salad-less! Love ya--canarygirl :-)

  4. YUM, and SO Simple. Should have thought of this myself-DUH! I cut grape tomatoes in half to use, and all loved this. Refreshing, healthy dish in summer, when too hot to cook:)
     
  5. I also modified this recipe a touch. We prefer a higher vinegar to oil ratio and I also added one bunch sliced green onions. Will definitly make again!
