- 1 head cauliflower
- 1 bunch broccoli
- 1 stalk celery
- 1 bell pepper
- 1 bag baby carrots
- 1 small onion (in rings) (optional)

Dressing
- 3⁄4 cup canola oil
- 3⁄4 cup vinegar
- 1 dash garlic salt
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 teaspoon dry mustard
- 2 teaspoons poppy seeds (optional)
- 1⁄2 cup sugar

Other vegetables you can add
- yellow squash or zucchini
- fresh mushrooms
- cucumber
directions
- Break or cut vegetables into bite-sized pieces.
- Mix in a large bowl.
- Dressing: Mix and pour over vegetables.
- Let stand overnight.
- will keep two weeks in refrigerator.

This was a real hit during Thanksgiving AND Christmas this year. Varying the vegetables to green white and red make it perfect for Christmas too. As an aside, in the past I've done the italian dressing with veggies but honestly I liked this even better. It was great to have something healthy around to offset all of the sweets at Christmas! Thanks!
