  1. A recipe I remember my mother making for potlucks. Simple, refreshing and delicious - with or without the coconut! We also use VERY well drained crushed pineapple in place of the chunks, which seem too big. I'm a high school food & nutrition teacher now and we're trying this one out tomorrow!

  2. This is delicious! My grandmother used to make it when I was a kid. She also added mandarin cherries. I'm going to make it again this weekend, but I think I might add strawberries.

  3. This is one of my favorite salads! In fact, I just made this yesterday. It's original name is 5-cup salad...an old, but delicious recipe. I actually use crushed pineapple and prefer it. The trick is to drain it REALLY well before adding.

  4. I usually love this salad, but I made the mistake of using a can of crushed pineapple instead of chunks, and used fat free sour cream. The resulting salad was very liquidy and not very "fluffy" as it should be. Stick to the recipe!

  5. This is delicious! I also had some red grapes, so I sliced up about a cupful and threw those in too. Thanks!
