- 4 pieces cinnamon sticks
- 1 teaspoon cardamom seed
- 10 cloves, whole
- 5 cups water
- 1⁄4 cup black tea leaves (or 3 teabags)
- 1 teaspoon vanilla
- 1⁄4 cup honey
- 3 cups milk
directions
- Tie up the cinnamon, cardamon seeds and cloves in a piece of cheesecloth and tie it with a string into a bag. Put the bag of spices into a pot with the 5 cups of water and bring to a boil. Reduce the heat and simmer the spices for 15 minutes.
- Turn off the heat and put the tea leaves (or tea bags) into the hot spiced water and steep for 2-3 minutes. Remove the cheesecloth bag and strain the liquid thru a sieve to remove the tea leaves.
- Add the milk, honey and vanilla to the strained chai. Serve hot, or cold over ice.

This is a wonderful chai tea! I added just a little black pepper to the spice mix because I love it in chai. I tied my spices in a paper coffee filter which worked great, and used tea bags so no straining was needed. Had some warm first thing in the morning and iced as the heat of the day began to set in and enjoyed it both ways - thanks for sharing the recipe! Made for ZWT8, Chefs gone WILD!

This made a very lovely pre-breakfast cup. The spicing is lighter than many Chai's so I'm sure that it will appeal to those who prefer a lighter hand with spice. I love heavy spice and seasoning but this was much enjoyed as a first cup of the day. Would certainly make again. Used slim milk and Splenda for the honey to lower sugar content.
