Meatloaf for 2

"I found this recipe in the "Eating For 2" recipe magazine. I've made this recipe a few times, and both my husband and I like it. I always make a double batch and freeze half for another meal."

  • In a bowl, beat the egg. Add milk, cracker crumbs, onion, salt, sage and pepper. Crumble beef over mixture and mix well. Place mixture into 2 mini loaf pans or shape into 2 loaves and place in a shallow baking dish coated with nonstick cooking spray.
  • Combine the ketchup, brown sugar and worcestrershire sauce; spoon over the meat loaves. Bake at 350 for 40-45 minutes or until meat is no longer pink and a meat thermometer reads 160: drain. Makes 2 mini meat loaves.

Hi, I am originally from Minnesota, and moved to Southwestern Missouri 5 years ago. My husband & I lived in Missouri for 2 years, and then moved to Florida's Gulf Coast for 2 years. We have since returned to Missouri, and live in the Ozark Mountains, on beautiful Table Rock Lake. I own a residential & commercial cleaning business and enjoy working for myself. I enjoy quilting, gardening, cooking, exploring and traveling, but since I am mainly a home-body, I enjoy just puttering around the house. I have no favorite cookbook (seems constricting) and my husband has done most of the cooking for the past 5 years and loves to BBQ...but I have found myself missing the "comfort foods" of home and the north, those hot dishes and creamy casseroles that tasted so good on those cold winter nights. So, to satisfy my tastebuds, and needing more than steaks and brauts from the grill, I went online and came across this wonderful website!! I like that fact that there are so many recipes that are made of simple and basic ingredients that most of us already have stocked in our cupboards.
