Meatloaf-Haters Meatloaf

"I hate meatloaf - DH loves it. I came up with this, modifying a recipe for meatballs, and we both love it. It doesn't have a sauce because it doesn't need it. It's wonderful on it's own. We like to roast carrots with it, and serve it with mashed potatoes and biscuits."

  • Put all ingredients into a large bowl or into the bowl of your mixer and mix together.
  • Shape into a loaf and bake at 375 degrees F.
  • for 35-40 minutes.

  1. I am also a meatloaf hater but this was great. I especially liked the fact that it wasn't as greasy as regular meatloaf. We did change the veal (I don't care for it)for ground turkey and added chopped onion and green peppers (as we add these to anything we can). My hubby thanks you for this recipe since I haven't made meatloaf in over a year.
     
  2. I love meatloaf and this was a great recipe. I omitted the veal. Cook time was longer than 40 minutes, but I might have had a 'fatter' loaf.
     
  3. This is a very good meatloaf recipe. One thing I did was to take peeled potatoes, cut into large wedges, place them in bowl & drizzle with oil. Add garlic powder, salt & black pepper, and mix around until coated. Place around the sides of the meatloaf in a large dish. Drizzle any remaining garlic oil left in the bowl over the meatloaf & bake. Also, use Italian seasoned breadcrumbs in the meatloaf. Serve with salad with oil & vinegar dressing & Italian bread. Yum!
     
  4. This recipe definitely needs onion which I think will add a little more moisture. Just a wee bit dry. Don't know how ANYONE found it done in just 35-40 minutes. Know my oven temp is correct and it took about 75 minutes. With a couple of tweeks, I'll use the recipe again.
     
  5. Followed the recipe exactly, baked it for 40 minutes and the middle was still raw. Since my husband was already starving, I just sliced it and microwaved it for a couple of minutes. It was tasty, but not salty enough. Next time I'll add more salt and pepper and cook it for 50 minutes instead. Thank you!

  1. I use oats instead of bread crumbs. I'm not a fan of veal or pork. so I just use plain ground beef and ground turkey. My DH loves it!
     
  2. This recipe is excellant! I used ground turkey instead of veal and added some fresh mushrooms and onion. It is very easy to make, just mix it all up and form into a loaf. It took a little over an hour to bake though, but I have an old apartment size oven that I think is a little off. Great recipe! Everyone enjoyed it!
     
  3. We absolutely love this meatloaf. It has replaced all other meatloaf recipes in my house! Did a couple of things different 1) used 1# ground pork instead of ground veal 2) I use seasoned bread crumbs 3) don't use the parsley 4) I put spicy honey BBQ sauce on top for the last 5 minutes. Otherwise everyone in my house and anyone else that has tried it loves it. Thank you soooo much for this recipe!
     
  4. Good meatloaf. I also omitted the veal and used double beef and pork.I didn't have any basil so I used oregano instead. I also put in chili powder instead of the cayenne.It had just a little bit of bite to it.I made it into 4 mini loaves and baked it for 35 minutes. The only change that I will make the next time would be to add some cheese to it. My usual meatloaf has cheese and my kids missed it.
