DIRECTIONS

  • Step 1.
  • Add peppers, 1/2 tsp oil, garlic, paprika, cumin and crushed red pepper (if using) in a mini food processor. Puree until fairly smooth.
  • Step 2.
  • Combine quinoa, olives, onion and the remaining 1/2 tsp oil in a medium bowl.
  • Step 3.
  • In a bowl add quinoa mixture and top with chickpeas, cucumber and the red pepper sauce. Sprinkle with parsley.
