Memorial Clam Chowdah

"On Memorial Day, my son asked me to make him some clam chowder, as he was having an intense craving. This was what I put together for him, and it was even better that the usual New England chowder I usually make."

  • Melt butter, add minced veggies, saute 5 minutes.
  • Add 1 cup water, cover, simmer until veggies are soft.
  • Mix cayenne, salt, pepper and parsley; add to veggies.
  • Add potatoes and clams.
  • Mix flour and 1 cup water; add to veggies and stir 2 minutes.
  • Add half-and-half and heat through, but do not boil. Stir while heating to thicken.
