- 1⁄2 cup butter
- 1 small red pepper, minced
- 1 onion, minced
- 1 large carrot, minced
- 1 cup water
- 1⁄8 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons parsley
- 2 (16 ounce) cans sliced potatoes, drained
- 4 (6 ounce) cans minced clams
- 1⁄4 cup flour
- 1 cup water
- 1⁄2 gallon half-and-half
directions
- Melt butter, add minced veggies, saute 5 minutes.
- Add 1 cup water, cover, simmer until veggies are soft.
- Mix cayenne, salt, pepper and parsley; add to veggies.
- Add potatoes and clams.
- Mix flour and 1 cup water; add to veggies and stir 2 minutes.
- Add half-and-half and heat through, but do not boil. Stir while heating to thicken.
