  • Preheat oven to 350°F.
  • In large pot combine soup, milk and cream cheese and mix until creamy on medium low heat. Add Taco seasoning and mix well.
  • Drain black beans and add them along with peppers.
  • Add chicken, tortilla strips and rice. Mix well and heat thoroughly. Place in 9x13 casserole and sprinkle taco sauce over. Top with cheese and crushed tortilla chips.
  • Bake at 350°F for 30 minutes until bubbly on the sides.

I don't have a favorite cookbook because I use all of them and hunt on the Internet constantly. However, I use my Better Home and Gardens cookbook a lot for looking up ingredient equivalents and substitutions. My passion is cooking/baking. I just started decorating cakes and cookies on a stick. It's a lot of fun and would like to take a Wilton class. I also enjoy crafting. I make flower arrangements and no-sew fleece blankets, fabric-lined baskets, etc. I sing in our church choir and really enjoy that as well. My biggest pet peeve I guess, is people that are negative all the time.
