Mexican Cream (Fudge)

"Delicious fudge that is not chocolate. A local award winner and very sinful! Holiday favorite with us for years, I remember as a grade schooler I always got the job of stirring this til i thought my arms would fall off! Now I see how well worth it it was."

directions

  • In large suacepan mix all ingredients except vanilla and nuts.
  • Boil until it forms a soft ball, STIRRING CONSTANTLY.
  • Set pan in cold water and beat in vanilla and nuts.
  • Stir until gloss leaves and is hard enough to spread in pan.
  • (Don't stir too long) Spread in pan and cool.

  1. Very sinful is pretty accurate, Laurie! After I’d made these and they’d cooled just a bit and I tried one, I looked back at the recipe and thought OMG what have I done! 416.9g fat! Okay that is for the whole batch, but since most of us are so easily hoodwinked with statistics it just might be a good idea to specify the number made so that the fat content looks less daunting! Of course the number made will vary, depending on how people cut the fudge in their pan. I cut mine into 30 individual pieces of fudge, sorry Mexican Cream (Fudge). Needless to say they were delicious, TOO delicious to make often, but I’ll keep this recipe in mind – along with another Zaar fudge recipe I made and reviewed some months back – when it’s time to make such things for Christmas gifts. Needless to say, they were scrumptious: they’d have to be when the fat content is so high! If you’re disciplined, a great recipe to make – for others!
     
  2. This is a wonderful fudge. I am way past the age of being a grade-schooler...but I thought my arm would drop off too. This took a long time stirring for sure. I was worried it was going to be more like caramel than fudge, but turned out wonderfully!
     
  3. This stuff is very addicting and very bad for you, but it tastes so good! My diabetic DH was upset because I wouldn’t let him have any.
     
  4. Very nice change from the usual chocolate fudge. A lighter, creamier taste than chocolate fudge also. I did not have pecans so used walnuts but definitely will be making this again for the holidays and will use the pecans. Thank you Laurie!!

Either it just didnt work in preparation, directions, or taste. I will tell you why and would not make it again unless I altered it much! <br /> <br />2, 1 STARS.....I DO NOT give these as I feel they are NOT worthy....especially if the recipe previously had good reviews and by my giving a low one would jeopardize the ratings. It is very nice for a change to not have to deal with the everyday stress of deadlines and office politics! It is nothing for me to start a recipe at 10pm right before bedtime, and yes I have cooked all nite. Kind of a marathon!! <br /> <br />Cookbooks are my passion and I can't resist the ones that churches, schools etc. put together and well as the ones in the grocery stores. My collection numbers well over 2000 and where as some people go to bed with a good novel, my nightstand is full of cookbooks! <br /> <br />I love to bake and its nothing for me to make 15-20 different kinds of cookies and candies for the holidays. I guess that it has rubbed off on my oldest daughter who is a culinary school graduate and knee deep in pastry classes, hoping to become a pastry chef! <br /> <br />In March of 2002 I had gastric bypass, weight loss surgery and I have lost 125 pounds FOREVER, so now when I do cook it IS for everyone else to enjoy. <br /> <br />I love Zaar and all the friends I have made here, this sight is so addictive but yet so much fun! And the recipes aren't bad either..LOL! I know that in the years since Ive been a permanent fixture of this site I have acquired many great recipes and tons of cooks that I am proud to call my friends! I have also tried many foods that years ago I would never have even imagined.</p>
