  • Place tortillas on two ungreased baking sheets; spread with beans.
  • Layer with salsa, tomatoes, chilies, green pepper, onion, olives and cheese.
  • Bake at 350°F for 10 minutes or until the cheese is melted.

  2. Super-simple and super-good! I used whole-wheat-low-carb tortillas and topped them with fat-free beans, salsa, green chilies and low-fat cheddar. This was perfect for a quick, but good-tasting dinner. I will make these again.
     
  3. These were really good! I made them for dinner last night and my DH said that they were just as good as the nasty high fat version at Taco Bell. I used the low fat cheddar cheese and couldn't really tell a difference, except that it didn't melt as well. I also chopped up extra green, yellow, and red peppers since I didn't have any green chilies. I will definitely be making these again!
     
  4. Had last minute company for lunch and fixed this. Turned out great and was quite filling. Guys especially liked it. Will also use recipe for quesadillas. Thanks Mimi, TJ

Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village. Just in case my employer comes here, please don't ask where I am from, or I'll be sacked like the last nanny was. ;-) I take care of 4 gorgeous, and darling kids. 3 girls and a boy. The boy is the youngest (and my favorite). They are great children, very, very active. (Hyper) I love to cook. I guess that's a given, why else would I be here. Part of my job is also to prepare meals for the family. The more they like my food, the longer I get to stay. (just a little joke) On my day off, I usually go out to the cinema or some dance clubs with the other au pairs in this town. That's about it I think.
