Mexican Restaurant Marinated Cheese

"My son-in-law loved this when it was served as an appetizer at a local Mexican restaurant. Since there are only two ingredients, it wasn't hard to figure out how to make it at home. Fast and easy and only four or five steps. (One more if you count looking for the jar opener.) (If the jalapenos in your store are in a different-sized jar, don't worry about it. Amounts aren't critical in this.)"

  • 1. Open the package of cheese and cut it into 3/4-1 inch cubes.
  • 2. Place the cheese into a container with a lid.
  • 3. Find the jar opener and open the jar of jalapeno slices.
  • 4. Pour jalapenos over cheese and stir a little.
  • 5. Cover and refrigerate overnight.

I live in NW Indiana, near Chicago, retired more than 3 years ago. I'm on our local school board and play alto sax in a community band. I can't choose a favorite cookbook, because I have about 20 feet of shelves with nothing BUT cookbooks. One of the "ideas" listed for this was, "If you have a month off--no work, no responsibilities...." I've had the no work, but the responsibilities are still there. And what I do is put things off until tomorrow because there's plenty of time. Even if there isn't. One of my pet peeves is not being able to find things in my kitchen. Since my son moved back in, and he cooks, and he uses my kitchen...I'm peeved a lot.
