  • Combine first 8 ingredients in a bowl and mix with hands until well mixed.
  • Pat into a 9 x 5 loaf pan.
  • Cook in microwave on full power 6 minutes.
  • While cooking for the first 6 minutes, combine sauce elements into small bowl and whisk until mixed. At the end of the first 6 minutes pour sauce over the loaf and continue cooking for an additional 5-7 minutes. (For a firmer loaf. decrease tomato sauce to 6 ounces).

  1. There is no mention of covering the meatloaf in the microwave. I plan on putting a paper towel over the top just splatter.

  1. I have been using this recipe for years and it’s the only meatloaf I make now. The duplicate ingredient for the topping sauce is an error. It should have been 1 tbsp of mustard.

Wow, I didn't think this would be as good as it was, I can't believe that it only took (in my case) 12 minutes to cook. my micro is a 900w so I cooked it for 12 minutes and it was well cooked at that. If your micro is not such a high wattage you might want to cook it longer, very nice meatloaf, the oats are a nice touch rather than bread crumbs. And I used beef but next time I will try turkey and maybe a bit of sage in it, I think that would be a nice combo. Made for PAC Fall 09
     
  3. Very easy, quick meal. Tasty too! I changed it up a bit. Added to the meat mixture: 6 big cloves of garlic, minced, 1 tablespoon (approx. I don't measure) lemongrass, 1 tablespoon rosemary (I grind it fine so the flavor blends). Everything else I did the same. I havr a 1250 watt MW and it was ground chuck. I cooked it the full 13 minutes. After allowing it to rest, it was heaven on earth. I never made meatloaf in the MW before but I'm sold on it now!

  5. Wonderful microwave meatloaf. The sauce was delicious. I won't cook meat loaf any other way, now! Just one question....why was 1 tablespoon brown sugar listed twice? Was this a typo or did I miss something?

I now live in Texas but I recently moved from the Pacific Northwest but I have lived all over. Spent time in Europe and mostly west of the Mississippi and the South. I am a Jr. Executive with a large company and I have seen my waist and health go in directions that make me unhappy as well as unhealthy. I am the main cook and bottle washer in the house and have focused on healthy eating. I have converted to vegetarian eating in 2009 with a heavy emphasis on vegan recipes. I FEEL GREAT!
