  • Melt butter in large skillet.
  • Add Tabasco into eggs and pour into skillet.
  • Add onion and green pepper.
  • Stir.
  • When eggs are almost set, add cheese.
  • Turn heat to lowest setting, add tostados and finish cooking.

  1. Delicious, different way to prepare eggs. This was a snap to prepare and tasted great. Notes: I chose to briefly saute the onions and pepeprs in the butter first for about 1-2 minutes before ading the eggs and also used 4 large plain tortilla chips, crumbled for the crumbled tostadas part- I felt this was the perfect amount.

  3. I only recently became aware of Migas and went in search of a recipe. This was wonderful! I only had to make a few small changes...like the previous reviewer I also sauteed the veggies first, and since I had no tostadas I also sauteed some torn-up corn tortillas with the veggies. We didn't have Tabasco but 2 Tbsp of salsa worked just as well. I served these with salsa and sour cream; even the kids went crazy over them. They thought it would also make a good filling for breakfast burritos. Thanks so much for posting this TexMex treat!
