  • Pare beets and cut into cubes.
  • Bring salted water to a boil and add beets, reduce heat and simmer for about 40 minutes or until tender.
  • Drain beets and add butter and jelly, continue cooking until beets are glazed.

  1. wonderful!! I used organic striped beets which aren't as red as most, but very sweet. The mint jelly was great with them, even though i think i might try mint sauce as well to balance the sweetness depending on my main course. I also discovered that microwaving works as well for beets as for potatoe's and you don't get the "bleed" of color and flavor that happens in water.
