- 1 (18 ounce) . can pumpkin (not pie mix)
- 1 (12 ounce) can fat-free evaporated milk
- 1⁄2 cup egg substitute
- 1⁄2 cup brown sugar
- 1⁄2 cup flour
- 1 1⁄2 teaspoons pumpkin pie spice
- 3⁄4 teaspoon baking powder
- 3 shakes salt
directions
- Preheat oven to 350; convection oven to 325°F Spray pie plate with cooking spray.
- Mix everything until smooth. Pour into plate. Bake 50-55 minutes or until butter knife inserted in center comes out clean.
- Cool at least 30 minutes. Chill leftovers.
