Mom's Strawberry Pie

  • STRAWBERRY TOPPING.
  • Wash and halve strawberries.
  • Whisk together the sugar, cornstarch and salt in a medium saucepan.
  • Add the water, lemon juice and red food coloring. Cook over medium high heat until the mixture starts to thicken, stirring frequently.
  • Add half of the strawberries and cook until mixture is thickened.
  • Add remaining strawberries and remove from heat.
  • Cool completely before putting on top of cream filling in pie shell.
  • CREAM FILLING.
  • While strawberry filling cools, whip the whipping cream.
  • In separate bowl, beat together the cream cheese, powdered sugar, vanilla and salt.
  • Fold in the whipped cream and spread in the bottom of the cooled pie shell.
  • Once the strawberry filling has cooled, gently put it on top of the cream filling.

  1. I have made this three times and it comes out great each time. The cream cheese in the filling really makes it different from other strawberry pies. I put really large chunks of strawberry in the topping so they do not break down so badly. Make sure you give it enough time to chill and set up.
     
  2. Definitely five stars. This recipe was perfect for all of my newly picked strawberries. I followed the recipe as is. I do agree with the other reviewers to wait until it's almost too thick when first putting the strawberries in the pot. I waited until it looked like preserves. Thanks for an awesome recipe, I can't wait to go strawberry picking again so that I can make another pie!

  4. Absolutely delicious and a real treat for my family today. I mixed some blueberries into the second half of the strawberry mixture (added off the heat). The cream filling was delicious, and the topping was a fruity delight. Thanks!
     
  5. My review is just for the strawberry topping although the whole thing sounds yummy! I used the topping as a sub for canned pie filling in recipe #211111 and it worked beautifully. I did have a bit of an issue with it not getting thick but eventually, cooking it _much_ longer than I anticipated that it would take, the cornstarch powered up and gave me a thick glossy filling. Thanks for sharing your recipe! Looking forward to making the whole pie!
