  • Saute meat cubes in shortening until brown on all sides.
  • Add pepper, paprika, bay leaf, salt, beef broth, red wine, onion, and carrots.
  • Cover and simmer until meat is tender, about 2 hours.
  • Add whole onions and potatoes; cover and simmer for an additional 15 minutes, or until the vegetables are barely tender.
  • Mix butter and flour into a paste.
  • Drop into simmering stew.
  • Cook, stirring, until stew bubbles and thickens.
  • Serve with rice or polenta.

  1. Fantastic! I sauteed in coconut oil and just used red onions. I also added chopped garlic, celery, and thyme. Also added a splash of milk at the end. Family devoured it and my husband said this is "the" recipe to save. We served the stew with a fresh loaf of bread and lots of butter. Now I need a nap.

  5. This was a hit when I made it for church. I needed something special to make with the last bit of moose we had from Alaska. I couldn't find new potatoes because I was in a hurry and used red ones instead - It would have turned out so much better with the new potatoes!! Thanks!!

Tweaks

  2. Excellent recipe! I actually used moose meat I rec'd from a neighbor, however this would be just as good with beef or bison etc. My tweaks were adding 3 strips of bacon to the shortening and browning of meat. I also added 2 chopped parsnips instead of white pearl onions (not a fan of those) I also added a handful of frozen peas toward the end. I used very small red potatoes chopped in half added after one hour. Served over rice. It was perfect!
