Muffin Pan Pizza Rolls

"I have come up with a homemade version of the pizza rolls at a local pizza restaurant. They can be filled with what ever toppings you enjoy. I used recipe #35805 in my bread machine and recipe #22280 with great results my kids loved. ***Update: Having made this recipe several more times, I have found that I get better results baking the muffins with the sauce for 10 to15 minutes before adding the cheese. This eliminates the having to cover with foil to keep the cheese from over browning. I have changed the recipe below."

  • 1 large pizza dough
  • 2 cups pizza sauce
  • 2 cups mozzarella cheese, shredded
  • 2 cups other pizza toppings (optional)

directions

  • Preheat oven to 375°F.
  • Grease 1 12-cup muffin tin with cooking spray. (Have another 6-cup muffin tin available. You may have enough dough to make a few more muffins.).
  • Pinch off a ball of dough slightly larger than a golf ball and flatten in the palm of your hand. Press into a muffin cup. Continue until all dough is used. The pizza dough will not stay up the sides of the cups, this is okay.
  • Put 1-2 tablespoons of sauce into each dough cup. Use the spoon to press downward into the dough to make a cup.
  • Add other toppings to each roll. (Hold off adding the cheese for now).
  • Bake muffins for 15 minutes before adding cheese.
  • Sprinkle 1-2 tablespoons of cheese on top of sauce and any other toppings.
  • Bake for 10 minutes more. Lift one roll out of cup gently to check bottom to make sure it is baked through the bottom.

  1. Kids loved it for after school snack last week and have been requesting it again this week. I made 24 and wrapped them in foil before I picked the kids up from school. I have some picky eaters and kids aged 2 to 11 emjoyed them.

  3. Great and easy recipe!! I remember my mom making us mini pizza 'muffins' like this when I was little- I think she got it from a magazine. It used refrigerator biscuits and was very similar. For these I used garlic sprinkle on the dough and topped them with Parmesan cheese for flair. It would be easy to make these in a pinch with crescent roll dough to make it faster. Thanks for the trip down memory lane! :-)
     
  4. Made these for Freezer Tag 2008. My dough recipe made 17 muffins. I made recipe #133906 for the sauce. for toppings, I used some sausage and chopped olives that I had on hand. Next time, I will try some with chopped pepperoni (for the kids), and some with mushrooms (for me). These turned out very well. I admit that I cooked them a bit longer than I would have liked (I should have checked them at 20 minutes, but I thought that my dough might be a little thicker than suggested, so I let them cook for 25 minutes). I ate 3 right out of the oven. The remaining muffins I cooled, then froze in a ziplock bag until ready to serve. To reheat, I placed 8 muffins on a plate, and put them in the microwave on defrost for 2 minutes. Then I heated on high for an additional 2 minutes. The kids enjoyed these with additional pizza sauce for dipping. Thanks for posting! I will be making more of these to have on hand in the freezer for quick snacks, lunches or dinners!

I live in a small city in southwest Virginia. We have been here for 22 years and love being near the mountains. I have three kids that keep me busy 24/7. I love cooking for my husband, but am constantly battling the picky eating kids at mealtime. I originally joined when this site was called recipeZaar to put my recipes into meal menus to rotate on a regular basis. Hopefully, to take the brainwork out of food shopping, menu planning and preparation. The problem is that I have found so many new recipes I want to try here I am going to end up with 100 menus! I guess that isn't so bad, variety is a good thing.
