Muffin Sized Breakfast Quiche

"From the kitchen of Leanne Ely author of "Saving Dinner." Measurements are approximate and cooking time and servings depends on the size of your muffin tin cups and of course the size and appetite of who you are serving. This is a great and easy idea and I'm sure there could be many variations; different types of cheese, a little garlic, maybe some crumbled bacon, etc."

  • Preheat oven to 375.
  • Lightly grease your muffin pan with spray or oil on a paper towel, set aside.
  • Saute the Chopped Onions in a pan with the tablespoon of oil, until translucent.
  • Crack the eggs in a bowl and beat as if making scrambled eggs. Salt and Pepper eggs to taste.
  • Into the greased muffin cups add about 3 or 4 leaves of Spinach. (You probably won't use the whole bag.).
  • Top the Spinach with about a teaspoon each of the sauted Onions.
  • Top the onions with about 1 Tablespoon each of the Cheddar Cheese.
  • Then ladle enough egg mixture into each muffin cup to fill the tin about 2/3 full.
  • Bake your little quiches for 10-20 minutes, (depending on the size of your muffin tin cups.) They should be nicely browned on top, but do not overcook. Check for doneness with a toothpick.
  • Let your quiche-muffins cool for 10 minutes in the pan. Then using a dinner knife, gently run the blade around the perimeter of each muffin to loosen. Then plop them carefully on a plate to finish cooling and serve.

  2. Could I add chopped scallions instead of onion? And could I add cooked chopped bacon? Thanks!
     
  3. My accompanying dishes all use 350 so wondering if I could adapt this to 350 too?
     
  4. Have you tried freezing them for enjoyment later ? I'm a widower and always looking for food to make enough for another meal.

  1. I made a simpler version - with just the eggs, cheese and some chopped up ham. It was delicious! I made it for our ladies brunch at church - and it was all gone, always a good testimony to a recipe. Thanks for this simple and delicious recipe.
     
  2. this was a very easy first quiche recipe for me. I altered it's slightly by also adding to the egg mixture some of my reserved onions and spinach and a tiny bit of diced ham. I also topped off each muffin with a little bit of the reserved shredded cheddar cheese. The photo I posted is of the mini quiche muffins before they were baked... Also individually freeze nicely for a quick 30 sec. microwave breakfast later!!!

  4. very good and easy to make. made them for brunch for my boyfriend and I.I sauteed sweet peppers and onions in olive oil as well as added bacon bits.

I am a coastal California girl, relocated to Arizona a few years back now. I never thought I would like Arizona, we were giving this locale a two year trial period. Our favorite time of day is the morning, sitting out on the back patio with our coffee, watching all the bird life; quails, thrashers, sparrows, woodpeckers, starlings, mockingbirds, wrens and the cottontail bunny rabbits and the occasional coyote passing through the yard. We have wonderful weather 10 months out of the year, great sunsets and great neighbors, who could ask for more! My folks came to visit us, fell in love with the community as well and in three days they bought a place too! My Mom calls me the president of the Chamber of Commerce, because I showed her the benefits and amenities of our community, so that she fell in love with it as well. So I took the next logical step and got my Real Estate license and became a Realtor. I am passionate about my new community, my new profession and all the regional southwest cooking possibilities!
