  • In a saucepan, stir together the rice, broth, water, salt & pepper. Cover pan and simmer until liquid is absorbed and rice is tender. Meanwhile, in a skillet, saute onion and shallots in butter until onions are soft. Add mushrooms and continue cooking until mushrooms are tender. Stir mushroom mixture into rice and heat through.

  1. Lots of wonderful flavor. I use rice a lot and this recipe is a keeper. Whats not to love about this combo? mushrooms, onion and shallot, yum. If there were a food Oscar I'd nominate this recipe.
     
  2. What a great recipe Nancy's Pantry. My dh was in flavor heaven. Said it was the best comfort food he's tasted in awhile. We really enjoyed this tasty dish. Loved the addition of the beef broth to the mix, it gives it a robust flavor. We enjoyed it served with pork tenderloin and corn niblets. Thank you for sharing a recipe that we will enjoy often. We will be having it again tonight and I can't wait.
