New Potato Salad for a Crowd

"One of my adopted recipes that I have updated. The recipe comes from EverydayCook.com and makes quite a large bowl of potato salad. With summer picnic's, family reunions, and other special occasions this will be a welcome recipe to have on hand."

  • Peel, cube, and boil potatoes in large pot of salted water.
  • In another pan, boil eggs.
  • When both have been cooked through, drain and let cool.
  • Peel eggs and chop.
  • In large mixing bowl add cooled potatoes, chopped egg, onion, pickles, and celery seed, salt and pepper.
  • Add sour cream and mayonnaise and stir gently to combine being careful not to mash potatoes.
  • Refrigerate until completely cooled before serving or overnight.

  1. We love potato salad in Texas and dill pickles, eggs and onion are a must. Really enjoyed the addition of the celery seed. Tried to make a half recipe, but I think I went a little over -- that's a good thing. Only change I made was to add more chopped egg. This will go well with our dinner tonight.
     
  2. Hope you don't mind that I customized this to my taste - I prefer to make my potato salad without eggs and less mayo. I also loved your idea of pickles to taste, and decided it would be fun to try (for the first time) with a lot (triple the amount) and I super loved it! Yummy.

  5. I made 1/4 of this recipe and it made more than 4 of us could eat! I love dill pickles so I'd probably double of triple the amount of them next time. So good and a great addition to the smorgasbord. Thanks!
