"Very easy to throw together and not the typical spinach salad..but so tasty! The flavors blend very well together - makes you keep going back for more. My kids love this! It goes well with just about any meal."

  • Prepare spinach into large bowl-basically I make sure it's cleaned and not too many long stems.
  • Add remaining ingredients including dressing and mix well.
  • Serve and enjoy!

  1. I love to find new spinach salad combinations. This was perfect. It's colorful, fresh and delicious. Super easy to make, too. I made no changes to the recipe; I just used low-fat ranch dressing. Thanx for posting!
     
  2. This was very nearly perfect, and yummy. Everyone loved it. Some onions were picked out in the course of dinner, so next time I might leave them out or use fewer. I had about one cup/4 oz. of dressing and it was perfect.

  4. Excellent salad! I pared it down to make one serving for my husband and he said it was the best salad he's had in a while! He's on the Atkin's diet and this salad fits right in, though I'm sure anyone would enjoy it. And very easy to put together, just like you said. Thanks Liisa, I'll be making this salad often.

<P>I'm a Mom of three boys: 19, 16, 13 (Josh, Jake and Jonah) and a 1 yr old golden retriever-Jethro. I work full-time as a Medicare compliance analyst for a non-profit health insurer. I love to cook - although I don't always have enough time to do as I'd like to do. I don't especially care to do the clean up though- but who does?? Food in general brings people together and makes people feel at ease. My boys love to help out in the kitchen-especially if I'm baking bread or baking sweet treats for them. If anyone were to ask them what I put in a recipe - first two ingredients they'd list would be olive oil and garlic -- (well not for the sweet stuff..at least)! I'm constantly browsing to see how I can alter/influence my family's eating - as well as trying to get it on the table quickly! My boys are all hockey players - so I spend a lot of time at the ice arena. When I have time of my own..I try to get on the golf course or read cookbooks.</P>
