1 six inch loaf
ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 2 tablespoons brown sugar
- 1⁄4 teaspoon salt
- 3 tablespoons butter
- 1 beaten egg
- 3⁄4 cup buttermilk
- 1 beaten egg (, with another in a separate cup)
- 1⁄2 cup raisins
directions
- In a mixing bowl, combine flour, baking powder, baking soda, brown sugar and ¼ teaspoon of salt.
- Cut in the butter until the mixture resembles coarse crumbs.
- Combine 1 beaten egg, raisins and buttermilk.
- Add to mixture above and stir until just moistened.
- On a lightly floured surface, knead gently for 12 strokes.
- On a greased baking sheet, shape the mixture into a 6 inch round loaf and cut a cross (4 inches wide and ¼ inch deep) in the top.
- Brush with the other beaten egg.
- Bake at 375°F for 35 minutes or until golden.

This turned out wonderful! I cooked mine in my rotisserie counter top oven and it was done all the way through at 35 minutes. The funny thing is that I find it tastes like KFC biscuits, only with raisins!!LOL. Which is perfect for me since here in Québec the KFC's don't sell biscuits! So thanks again!! I posted a picture too.

This recipe is very traditional, but I like my bread a little bit sweeter, so I put in 1.5x the brown sugar. I do not knead this dough by hand it is much to sticky, I just fold it in a bowl and it comes out fine. I also grease a cup cake tray and use that instead of making a loaf, the middle is never undercooked.

I made this last year for St. Paddy's Day and it turned out wonderful, so I am making extra this year to share. The ingredient list is not in order but, if you follow the instructions, it is not that hard. I baked each loaf in a glass pie dish and the bake time was perfect for each loaf. Thank you for sharing this wonderful recipe!

I retired in 1993 and travelled around the USA in a RV. In 1996, I bought a great little house in Frostproof FL and I'm here until I get called to the Great Gourmet Kitchen in the sky.
