Oat Waffles

- 1 cup water
- 3⁄4 cup oats
- 3 tablespoons butter
- 1 1⁄4 cups flour
- 1 tablespoon sugar
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 2 large eggs
- 1 - 1 1⁄2 cup buttermilk
- 1⁄4 cup butter, melted
- icing sugar
- fresh fruit (optional)
directions
- In a saucepan, bring water to boil. Add oats and cook, while stirring, for 3 minutes. Remove from the heat. Add butter and mix until melted. Let cool.
- In a large bowl, sift flour, sugar, baking powder, baking soda and salt. In another bowl, mix eggs and buttermilk. Add to the oat mixture that is cold.
- Add egg mixture to dry ingredients and stir until it’s homogeneous, without stirring too much. (If the dough is too thick, you can add a little bit more buttermilk)
- Preheat your waffle pan and brush the pan with melted butter. While following the instructions of the manufacturer, pour a little bit of dough on the pan and cook for about 4 minutes or until golden. Sprinkle with icing sugar. Serve with fresh fruits if wanted.

This is a nice basic waffle, a little doughier in the center then some - but not too squishy. The outside stayed slightly crispy which was nice as several other waffles I've tried recently seemed to go soft right away. I cut the recipe in half and got one full sheet of waffles (4 squares), plus 1 square, which was perfect for DH and I . The only change was to add tsp of vanilla though I like to add some chopped nuts next time. Made for Please Review my Recipe Tag
