- 1 cup instant oats
- 3⁄4 cup whole wheat flour
- 1 1⁄2 teaspoons baking powder
- 1 1⁄2 teaspoons cinnamon
- 1⁄8 teaspoon salt
- 3 tablespoons coconut oil, melted
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1⁄2 cup brown sugar, packed
- 1 cup apple, diced
directions
- Whisk together the oats, flour, baking powder, cinnamon, salt, in a large bowl.
- In a medium bowl whisk together coconut oil, egg, brown sugar and vanilla.
- Add the wet mixture into the flour mixture until incorporated.
- Fold in the apples.
- Chill in the refrigerator for 30 minutes.
- Preheat oven to 325 degrees.
- Cover baking sheet with parchment paper.
- Drop 14 rounded spoonful's on to the parchment covered baking sheet.
- Bake 13 to 15 minutes.
- Cool for 10 minutes before removing from baking sheet.
- Enjoy.
