  • Whisk together the oats, flour, baking powder, cinnamon, salt, in a large bowl.
  • In a medium bowl whisk together coconut oil, egg, brown sugar and vanilla.
  • Add the wet mixture into the flour mixture until incorporated.
  • Fold in the apples.
  • Chill in the refrigerator for 30 minutes.
  • Preheat oven to 325 degrees.
  • Cover baking sheet with parchment paper.
  • Drop 14 rounded spoonful's on to the parchment covered baking sheet.
  • Bake 13 to 15 minutes.
  • Cool for 10 minutes before removing from baking sheet.
  • Enjoy.
