  1. Whisk together the oats, flour, baking powder, cinnamon, salt, in a large bowl.
  2. In a medium bowl whisk together coconut oil, egg, brown sugar and vanilla.
  3. Add the wet mixture into the flour mixture until incorporated.
  4. Fold in the apples.
  5. Chill in the refrigerator for 30 minutes.
  6. Preheat oven to 325 degrees.
  7. Cover baking sheet with parchment paper.
  8. Drop 14 rounded spoonful's on to the parchment covered baking sheet.
  9. Bake 13 to 15 minutes.
  10. Cool for 10 minutes before removing from baking sheet.
  11. Enjoy.
