Oatmeal BlueBerry Bread

  • Heat oven to 350.
  • Grease a nd flour a 9x5x3" loafpan.
  • In a large mixing bowl,combine the first 7 ingredients.
  • Cut in butter,blend until mixute resembles coarse meal.
  • Mix the milk,eggs& corn syrup,combining well.
  • Add to first mixture.
  • Stir just until it is all moistened.
  • Add in berries.
  • Pour the batter in the loafpan.
  • Bake 1 hour,10 minutes or until toothpick in center comes out clean.
  • When done,let bread cool for at least 10 minutes before removing.
  • Let cool on wire rack.

  1. This is a lovely bread. It was especially good warm with farm fresh butter. The crust was nice and crisp, with a hint of cinnamon. We like our bread a little chewy, so I used 1/2 bread flour and 1/2 all purpose. I also used old fashioned oats, not quick, as that is what I had on hand.
     
  2. Dont make it with 1/4 simple syrup instead of corn syrup, old fashioned oats instead of quick oats, and 1 cup each wheat flour and all purpose flour instead of 2 cups all purpose flour. We will definitly give it another try {with proper ingredients} :)
     
  3. DH and I both thought it was a little dry. My DDS both loved it. We sprinkled it with powdered sugar to make it a little sweeter. It made for a nice breakfast.
     
  4. I made it with blackberries and it came out great, we are having it on christmas morning:)
     
  5. An excellent quick bread with a wonderful texture. We also liked that it wasn't overly sweet. We tried it both with and without butter and it is delicious either way. I used frozen blueberries we picked earlier this year and just stirred them in frozen, it worked great. Thanks for sharing this recipe, I will definitely make again. Nick's Mom
