  • In pan boil water add butter; stir in oatmeal and let stand 20 minutes.
  • Pour into mixer bowl and add eggs and the first two sugars; mix.
  • Add flour, cinnamon, baking soda, salt and nutmeg.
  • Mix well.
  • Put into a 9x13-inch pan.
  • Bake at 350 degrees for 35 to 40 minutes.
  • Frosting------------.
  • Boil the three ingredients for the frosting for 1 minute.
  • Add coconut and nutmeat.
  • Let stand.
  • When you take cake from oven put the frosting on cake.

  1. Made this for our coffee hour at church. It was fantastic! First of all, it's fun to make, since you boil half the ingredients on the stove and stir in the flour and leavening. It was quick to whip up. I did make one change! I used 1 & 1/2 cups flour instead of 1 & 1/3. I saw many similar recipes on the zaar, but one used the larger amount of flour. Since this was going to be "finger food" I thought the larger amount of flour would make it more cakey. I did see other photos for the same recipe and I wasn't sure, but it appeared like it needed to be eaten with a fork. The topping recipes all vary slightly and this one was a winner! I did make the cake the night before and frosted it. You boil the frosting (unlike the others that broiled) and it cooks up nice and thick. The next morning the topping had hardened with a thick glaze (that appears very professional) which cut wonderfully. It's not gooey like the German Chocolate frosting (which is so yummy, but messier to cut). The cake was wonderfully fluffy and cut beautifully. It was a BIG hit with the church people! I couldn't believe how good it was. This is an old recipe that does not deserve to be forgotten! I will include this cake every time I do the coffee hour. Please thank your mother n law for the recipe. It is a real special one and I liked knowing it was a family one. Roxygirl
     
  2. This cake is easy to make and a moist, delicious cake! My mom made this when we were growing up and I've always loved it. The only difference in her recipe is that she doesn't boil the frosting, she just spreads it on the warm cake and puts it under the broiler until just lightly browned. My husband loves dates so I add them to the oat/boiling water mixture for an Oatmeal Date Cake. Charlotte, thanks for sharing another great recipe.
     
  3. A lady from our church had made this cake for my son after he had undergone surgery, and he fell in love with it... since that time I have been searching for the recipe. The search is over! THIS is it!!! Oh, how good this is warm from the oven! My son came home from a week at camp today and I had this as a surprise for him... needless to say, I scored BIG time! Thanks so, so much for sharing, Charlotte! The only change I made was to omit the nutmeg - simply because it was so much like the cake we first had without it!
     
  4. This is one of our favorite cakes! I have made it for years except that I omit the nutmeg (just not a big fan). The directions on my recipe are a little different, but I tried this way, and I think this works better than the way I use to do it (biggest difference was to mix the topping ingredients, top the cake, and put it under the broiler for a few minutes---problem was that it was very easy to char the nuts!). Thanks for posting.
